Almond Flour Chocolate Chip Cookie Skillet

This almond flour chocolate chip cookie skillet is so soft and chewy! The most delicious way to eat a cookie. Using my Almond Flour Salted Chocolate Chip Cookies I created a delicious, dense chocolate chip cookie skillet! Cooked to perfection in a cast iron skillet and served warm topped with ice cream. Cut everyone their own slice or just grab some spoons and dig in! This is a family favorite! Everyone is always shocked it is gluten-free, grain-free and dairy-free! The perfect dessert for any occasion! Hope you ENJOY!!!

Ingredients

  • 2 cups almond flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon

  • 2 eggs

  • 2/3 cups softened coconut oil

  • 3/4 cups brown sugar

  • 2 teaspoons vanilla

  • 1 cup chocolate chips


Instructions

  1. Preheat oven to 350 degrees Fahrenheit and lightly coat a 10 or 12 inch cast iron skillet with oil.

  2. In a medium bowl combine almond flour, baking soda, salt and cinnamon, mix together and set aside.

  3. In a large mixing bowl add coconut oil, sugar, eggs and vanilla and mix until smooth.

  4. Add the dry ingredients to the wet ingredients and stir well to combine. Fold in chocolate chips.

  5. Place batter in cast iron skillet and evening distribute throughout pan.

  6. Bake for 20-25 minutes.

  7. Remove from oven and let cool.

  8. Serve warm topped with ice cream.

  9. Enjoy!!
