Bacon Wrapped Pork Roast

This pork roast is amazingly flavorful, crispy on the outside and juicy on the inside. Covered in the delicious flavors of Fresh Jax Sunrise Cowgirl Coffee (affiliated link), seared to the perfect crispiness, wrapped in bacon and roasted to perfection. Everyone will be begging for more.
Serves 8 Prep Time 20 mins Total Time 1 hr 20 mins
3 lb pork roast
1/4 cup olive oil
2 - 3 tablespoons Fresh Jax Sunrise Cowgirl Coffee Rub
1 pound bacon
Preheat oven to 350 degrees Fahrenheit and place aluminum foil on a rimmed baking sheet.
Place olive oil in skillet and heat on medium high. Cover roast in coffee rub and once oil is heated sear roast for 5 minutes on each side.
Once seared wrap roast in bacon and place toothpicks in ends of bacon to hold together.
Place roast on baking sheet and cook for 45 minutes.
After 45 minutes heat oven to 375 degrees Fahrenheit and cook for an additional 15 minutes.
Remove roast from oven and wrap with aluminum foil and let sit for 10 minutes.
Cut into desired slices.
