Gluten Free Brownie Bites

The best gluten-free brownie bites! These decadent little treats are the ideal bite sized dessert. Perfectly crisp edges, fudgy in the middle and so much rich chocolatey goodness, topped with the best cream cheese frosting and optional berries! This recipe is sure to be your go to for all your gluten-free brownie needs! So easy and so good! Hope you enjoy!



Serves 24 Prep Time 15 mins Cook Time 10 mins Total Time 25 mins


Ingredients

  • 2/ 3 cup gluten free flour

  • 1/ 2 teaspoon salt

  • 1/ 2 teaspoon baking powder

  • 1/ 2 cup butter

  • 2 ounces unsweetened baking chocolate

  • 4 ounces semisweet baking chocolate

  • 1 1/ 4 cups sugar

  • 3 eggs

  • 1 teaspoon vanilla extract

  • Frost with my delicious Cream Cheese Frosting

  • Optional top with strawberries and blueberries

Instructions

  1. Preheat oven to 350°F, grease a mini muffin pan with cooking spray and set aside. Combine flour, salt and baking powder in a mixing bowl and set aside.

  2. In a medium sauce pan melt butter and chocolate over low heat. Once melted remove from heat and add sugar and vanilla.

  3. Whisk eggs and add to sauce pan. Mix until everything is combined and smooth. Slowly add dry mix and lightly combine (don’t over mix).

  4. Pour batter into mini muffin pan and cook for 8-10 minutes. Brownies are done when toothpick comes out clean.

  5. Remove from pan and let cool completely. Then frost with Cream Cheese Frosting and top with berries if desired.

  6. Enjoy!!!
