Gluten Free Chicken Fajitas

Make this super easy, gluten-free, chicken fajita recipe tonight! Made with chicken breast, coated with the best homemade fajita seasoning. Cooked to perfection with onions, bell peppers and mushrooms. The perfect-gluten free meal everyone will enjoy! Best part! So easy, with little clean up, everything is made in one pan! Serve it over your favorite gluten-free tortillas, chips, or a refreshing salad. Hope you enjoy!!

Ingredients

  • 3 chicken breasts

  • 1 red bell pepper

  • 1 orange bell pepper

  • 1 yellow bell pepper

  • 1 small yellow onion

  • 1 8 oz package of mushrooms

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon paprika

  • 1 teaspoon chili powder

  • 1 tablespoon tamari (gluten free soy sauce)

  • salt and pepper to taste

  • 1 teaspoon avocado oil


Instructions

  1. In a small bowl combine garlic powder, onion powder, paprika, chili powder, salt and pepper. Mixing until combine. Set aside.

  2. Thinly slice chicken into long strips.

  3. Heat large pan on medium-high heat. Coat bottom of pan with avocado oil. Add chicken, season with prepared seasoning mix and cook all the way through.

  4. While chicken is cooking thinly slice peppers into long strips, slice onion and mushrooms.

  5. Once chicken is cooked thoroughly add in peppers, onions, mushrooms and tamari. Cook until peppers, onions and mushrooms are soft. Season with salt and pepper.

  6. Serve with warmed tortillas, chips, salad or anyway you desire. Add your favorite toppings.
