Gluten Free Frying Pan Cookies

These gluten free frying pan cookies are the perfect addition to your dessert tray. They are so easy and require NO BAKING! This recipe has been in our family for years and one of my favorite holiday treats. The rice cereal adds the perfect crunch, filled with dates, cherries and walnuts creating the most amazing flavors, then rolled in coconut to create the perfect treat. The best part is how simple these are and how decadent they look and taste. I hope you enjoy!
Makes 2 dozen Prep Time 7 mins Cook Time 10 mins Total Time 17 mins
2 tablespoons butter
2 eggs well beaten
1 cup brown sugar
1 1/2 cup chopped dates
1 teaspoon salt
1 teaspoon vanilla
1/2 cup chopped walnuts
1/2 cup chopped maraschino cherries
3 cups gluten free crispy rice cereal
1 cup coconut flakes
In a frying pan melt butter and add sugar and eggs. Heat on medium-low and stir constantly for 5 minutes, then add chopped dates cook until bubbly, 10-12 minutes.
Remove from heat and add salt, vanilla, nuts, cherries and rice cereal and mix everything together until combine.
Let mixture sit until cool enough to handle, but still warm. Roll the mixture into teaspoon size balls and roll in coconut. Set on a baking sheet ad repeat until done.
