Grandma's Gluten Free Italian Pizzelles

Do you have a favorite Christmas cookie from your childhood? My Grandma's Italian Pizzelles are my favorite! The smells of them cooking brings back the best memories. I used to love to make these beautiful cookies with her and enjoyed eating them even more. They are a tradition I'm happy to be able to share with my kids. Thankfully it was easy to turn them gluten-free. I am so thankful I can carry on the tradition of these family cookies and make them safe and gluten-free for me and my kids.
Makes 3 dozen Prep Time 15 min Total Time 20 min
1 1/2 sticks of softened butter
1 cup sugar
1 1/2 cups gluten free flour
1 tsp baking powder
2 tsp vanilla extract
1 tsp anise extract
powder sugar for dusting
In a mixing bowl combine eggs, butter and sugar and cream together, then slowly add flour, baking powder, vanilla and anise.
Refrigerate for 30 minutes.
Heat pizzelle iron and lightly spray with cooking spray, then drop 1 tablespoon of dough onto the iron and close.
Bake for 30 seconds to 1 minute, until golden brown, using a fork remove pizzelle and place on wire rack to cool and immediately dust with powdered sugar.
