Herb Roasted Chicken with Chickpeas

There is nothing better than the smells of chicken roasting in the oven and filling the house with all delicious aromas, and this one is even better because it is stuffed with butter, herbs and chickpeas. My family absolutely loves this meal and I love making it. It's so easy and delicious and looks so fancy. The perfect family dinner.

Serves 6 Prep Time 20 min Total Time 1 hr 20 min


  • 1 whole chicken (with insides removed)

  • 1 15.5 oz can chickpeas

  • 1 stick butter

  • fresh rosemary, thyme and sage

  • 1 tsp garlic

  • 2 TBS olive oil

  • salt and pepper to taste


  1. Preheat oven to 425 degrees Fahrenheit

  2. Chop herbs and set aside

  3. Mix chickpeas with pinch of herbs, garlic, olive oil, salt and pepper, then mix butter with remaining herbs and salt

  4. Stuff chicken with chickpeas and place in a 9x13 inch baking dish

  5. In between skin and meat stuff butter and herbs throughout the entire chicken

  6. Cook for 1 hour or until chicken is fully cooked

  7. Remove chickpeas and cut chicken

  8. ENJOY!!!!
