Sheet Pan Sausage and Veggies

This sheet pan sausage and veggies will become your go-to easy weeknight dinner. Loaded with good, nutritious ingredients the whole family will love! Filled with peppers, zucchini, yellow squash, brussels sprouts and tomatoes, and your favorite gluten-free sausage. Slice it up and throw it all on a sheet pan, for the easiest dinner you will make all week! This meal is extremely customizable, so go crazy and add in whatever veggies your heart desires! I hope you enjoy!

Serves 5 Prep Time 15 mins Cook Time 30 mins Total Time 45 mins


  • 1 package of your favorite chicken sausage

  • 1 red bell pepper

  • 1 orange bell pepper

  • 1 medium zucchini

  • 1 medium yellow squash

  • 1 pound of brussels sprouts

  • 1 cup cherry tomatoes

  • 1 tablespoon garlic powder

  • 1 teaspoon onion powder

  • salt and pepper to taste

  • 2 tablespoons olive oil


  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. Slice sausage into bite size pieces, chop all of your veggies and place everything in the center of the baking sheet.

  3. In a small bowl add olive oil, garlic, onion, salt and pepper and mix together. Pour oil mix over sausage and veggies and mix together. Use your hands to mix and coat everything well.

  4. Spread sausage and veggies into a single layer on the baking sheet.

  5. Bake for 25- 30 minutes, tossing halfway through.

  6. Serve and ENJOY!!!
