Slow Cooker Chicken Noodle Soup

This gluten free slow cooker chicken noodle soup is hearty, delicious and perfect for the cold weather. Made with the best, simple, soothing ingredients. Serves 8 Prep Time 10 mins Total Time 6-8 hours


Ingredients

  • 1 whole chicken

  • 24 oz chicken bone broth

  • 6 cloves of garlic

  • 6 carrots

  • 4 celery sticks

  • 8 oz package mushrooms

  • 1 large onion

  • salt and pepper to taste

  • 3 bay leaves

  • 1/2 teaspoon thyme

  • 1/2 teaspoon rosemary

  • 1 tablespoon parsley

  • 1 package gluten free noodles


Instructions

  1. Pour bone broth into slow cooker. Mince garlic, chop carrots and celery, slice mushrooms and dice onion and place in slow cooker.

  2. Remove chicken from package and pat dry. Place in slow cooker and season with salt, pepper and thyme, then add bay leaves. Cover and cook until chicken is falling off the bone. Cook on LOW for 8 hours, or HIGH for 6 hours.

  3. Transfer chicken to a cutting board, let cool enough to handle. Use your hands to shred chicken into bite sited pieces. Discard the skin, bones and cartilage. Place shredded chicken back in slow cooker and add parsley, and season with extra salt and pepper if needed.

  4. Cook gluten free noodles. Place noodles in a bowl when done and pour soup over the top.
